Saint-Marcoux and Meringue Chantilly with French Atmosphere -Patisserie Lapin de Neige in Hakodate-

Patisserie Lapin de Neige (パティスリーラパン・ド・ネージュ) is a popular pastry store in Otemachi, Hakodate city and was founded in 2011. There is a building near Hakodate City Government. Lapin de Neige means a snow rabbit in French. The snow rabbit is used as an icon in many places of the store. An owner worked at Dalloyau Japon in Tokyo. The Dalloyau is a food company in French, and they seemed to be serving in charge of dining table at the Versailles palace since 1682. Therefore it is a French cake. I had no idea that a traditional French cake could be eaten in Hokkaido.
When I asked a waitress about store's recommendation, she replied a cream puff. However, unfortunately it was out of stock. She said that a saint-marcoux (サンマルク) sold well successively. Therefore I ordered Saint-marcoux, Meringue Chantilly (ムラング・シャンティ) which was graphically interesting designs and a cup of coffee. The price of Saint-marcoux was JPY 378. The price of Meringue Chantilly was JPY 303. A place for customers to enjoy foods and drinks was also at the store and visitors could enjoy.
Approximately 5 minutes later, the cakes dished up meaty on a plate and coffee were served. A container of the coffee was transparent glass. At first I ate the saint-marcoux. The cake had 5 layers such as chocolate mousse layer, fresh cream layer, sponge cake layer and others. A top was caramelized. The cake had bitterness of Caramelization in a sweetness. It is the cake for adults and was tasty!
I ate the Meringue Chantilly successively. Orange peel was at fresh cream and baked meringue. Rich flavor of the fresh cream and light baked meringues were good. The fresh cream became gradually heavy to me, but the sweet tooth was no problem.
