Chicken Soup Curry with Very Light Taste and Rich Umami -Coffee House in Sapporo-

Coffee House (こうひいはうす) is a long-established restaurant soup curry restraunt in Chuo ward, Sapporo city and was founded in 1977. Interior decoration is like a cafe bar. a record player is like begining to sound at any moment. How to order was written on a menu when I took a seat. That is as follows. Customers choose the soup from 2 kinds of the soup "smooth soup (さらさらスープ)" or "stewed soup (とろみスープ)". Then, choose hotness from 10 kinds of the hotness. Finally choose a kind of the soup curry. I chose "smooth soup", "1 hotness" and "chicken soup curry (チキンスープカレー)". The price was JPY 800.
For 10 minutes before a dish serving, I chatted to an owner. The soup was an additive-free and was simmered over low heat for 20 hours until bones of ingredients melted away. The soup was very light taste. It tasted slightly salty and umami was rich. This soup was unsuitable taste for person preferring thick taste. But it was the most suitable soup for person preferring the light taste. The appearance resembled the soup of a course dish.
The rice was turmeric rice made of Yumepirika (ゆめぴりか * It is said that this rice is the most tasty in Hokkaido). I could see an owner was dedicated to rice. For the taking much labor and time, They serve the soup curry for almost lowest price in the soup curry restraunt in Sapporo. He said "He could not be raised the price for regular customers, because I has opened the restaurant for 28 years". He added, "The restaurant was not crowded other than Saturday and Sunday".
