[Hiene in Sapporo] Creamy Chicken Broth Salt Ramen with Fishery Product Soup Stock Is Tasty

Garyumenbu Hien (我流麺舞飛燕) is a popular ramen restraunt in Nakanoshima, Toyohira ward, Sapporo city, and is near JCHO Hokkaido Hospital (JCHO北海道病院). Mr. Shuji Maeda (前田 修志), a ramen restraunt owner, has established it since 2010.The Hien was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. He trained his cooking skill at some ramen restraunts such as Yamaarashi (山嵐), a famous ramen restraunt in the Sapporo, and has sister ramen restraunts, Ramen Tsubame (ラーメンツバメ) in Yamahana, Menya Gensho (麺や 玄鳥) in Susukino and Sapporo Hien (札幌飛燕) in New Chitose Airport.
The ramen restraunt on the 1st floor of a block of flats faces Nakanoshima Street (中の島通), and is not so large, and has an atmosphere of a typical ramen restraunt. Counter seats, table seats and a small separate Japanese style room are provided, so I guess that even family customers may enjoy meals. But the ramen restraunt is crowded with customers at lunchtime.
Sapporo (札幌) that about 1,960,000 people live is the largest city in Hokkaido. Although there are various theories, its origin of the name is "Dry Big River (乾いた大きな川)" in Ainu language. A population of the Sapporo is the 4th largest city after Yokohama, Osaka and Nagoya in japan, and the population accounts for 36 % of Hokkaido's population! So the Sapporo has been flourished as the center of the Hokkaido. The area of the Sapporo is 1,121.26 km2, and is about as big as Hong Kong, and is the 7th largest city in the Hokkaido. The Sapporo is also famous as a tourist city, and about 15 million people come. As for a climate, it is hot that temperature rises to nearly 25 degrees in a summer, but it is easy to live without moisture. I always feel a little cool. It is cold that temperature falls to nearly -10 degrees in a winter, and amount of snowfall sometimes has more than 1 m. Article is here
Creamy Chicken Broth Salt Ramen with Fishery Product Soup Stock
I visited here around 14:00 on a weekday. 3 groups of customers enjoyed their meals at such time. Then 2 groups of visitors came in after me, and this restraunt was popular after all. A line is expected at lunchtime. The Hien uses a meal ticket system, and first customers should buy a meal ticket via a ticket vendor. The most popular ramen was Creamy Chicken Broth Salt Ramen with Fishery Product Soup Stock (魚介鶏塩白湯), so I bought it. The price was JPY 750. In addition, I bought a large portion of noodles, too, and the price was JPY 100. By the way, Hien (飛塩), a type of ramen, is popular, too. I sat a table seat, and handed the meal ticket to a waitress.
About 8 minutes later, the ramen was served. Roasted pork fillets, bamboo shoots, green onions, onions, a dried laver and chili pepper were on noodles. The creamy chicken soup was topped with shredded chili pepper, shredded green onions and cut white onions, and the appearance looked beautiful.
I ate a sip of the soup immediately. The chicken soup stock mixed with fishery product soup stock was very creamy, and was tasty! Fish powder were sprinkled on the surface of the soup, and it put the accent on the flavor of fishery product more. The owner has aimed at the soup that customers are able to drink up. I did not feel the soup was salty, and that was true. The whittish noodles made by Sagamiya Noodles Factory (さがみ屋製麺) went well with the soup, and the texture was smooth.
The roasted meat fillets were 2 types, a roasted pork fillet and a roasted chicken fillet, and especially, I favorited the tender roasted chicken fillet. Hosaki bamboo shoots of around 15 cm height were interesting, and the texture was good, too. Because the ramen is light generally, it is the ramen for light taste lovers. Thanks for the tasty ramen!
