[Closed Business: Namishibuki Kitami Branch in Kitami] Milky Taste of Salt Broth Ramen with Green Onion Surprised Me

Namishibuki

Namishibuki (波飛沫) is a popular ramen restraunt founded in 2008, and the head office is in Utoro, Shari town. The Namishibuki means "Sea spray" in Japanese. Mr. Hiroaki Kitabayashi (北林 弘明) is a ramen restraunt owner. He trained his cooking skill at Santoka (山頭火), a famous Asahikawa ramen restraunt, and became independent. It is said that the Namishibuki take from the taste of the Santoka's Ramen. They have also a branch ramen restraunt founded in 2011 in Kitami, and Mr. Hikaru Kaida (開田 光) is a shop manager. Both of the head office and the Kitami branch got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition, so that is amazing! My visited ramen restraunt was the Kitami branch. Unfortunately, the Kitami branch was closed down in June, 2018. This article before closing is as follows. Mr. Hikaru Kaida become independent, and open a ramen restraunt named "Menya Hikaru (麺屋 ひかる)" at present.

KITAMI

Kitami (北見) that about 120,000 people live is the 9th largest commercial city in Hokkaido, and is one of regional hub cities of the Northeastern Hokkaido area. The Kitami became incorporated with Rubeshibe town (留辺蘂), Tanno town (端野) and Tokoro town (常呂) in 2006, and has became the largest city by area in the Hokkaido. In Japan, it is the 4th latgest city by the area. The Kitami is also an agriculture city, and Onion and White Runner Bean are famous as a local product. As for a climate, it is hot that temperature rises to nearly 30 degrees in a summer, and it is cold that temperature falls to nearly -25 degrees in a winter, and it snow hard, too. Article is here

Salt Broth Ramen with Green Onions

I visited the Kitami branch around 13:00 on Sunday. The ramen restraunt with an atmosphere of a typical ramen restraunt was almost full, and was not large. It is said that a line is formed at lunchtime. Counter seats and table seats are provided, so I guess that even family customers enjoy meals. A waitress shown my seat, and I sat a counter seat, and ordered a bowl of Salt Broth Ramen with Green Onion (塩ネギラーメン). The price was JPY 880.

About 10 minutes later, the Salt Broth Ramen with Green Onion was served. The appearance was considerably white, a red chinese wolfberry fruit was outstanding.

I was surprised at the taste when I had a sip of soup immediately. This was light pork bone soup, and it was the taste like milk flavor soup. It had just the right amount of salt, too, and was tasty! The noodles were made by Kobayashi Making-noodles Factory (小林製麺) and, went with well the soup. It was unusual for having both roasted pork fillet and braised pork belly. I was satisfied. Thanks for the tasty ramen!
