[Hachiya Head Office in Asahikawa] Soup of Soy Sauce Broth Ramen Changes Its Color

Hachiya
Hachiya (蜂屋) is a long-established ramen restaurant run by Hachiya corp. in Asahikawa city. Mr. Enao Kato (加藤 枝直) established it in 1947. Naosumi Kato (加藤 直純) is a company president at present. Originally, the Hachiya was derived in an ice cream shop using honey. * The bee means "Hachi (蜂)" in Janapese. Their name is named after the honey. Mr. Kumahiko Kato (加藤 熊彦), Enao's elder brother, established Kato Ramen Noodle-making Factory (加藤らーめん), one of the most famous noodle-making factories in the Asahikawa, and the Hachiya laid the foundation of Asahikawa Ramen with the Kato Ramen. The foundation year of the Hachiya is same as Aoba (青葉), a famous ramen restaurant in the Asahikawa, and it is well-known as one of roots of the Asahikawa Ramen. The head office is near Asahikawa Ginza Mall (旭川市銀座商店街), and has a branch ramen restaurant. 5Jo Establishment Branch (五条創業店) opens a business in the Asahikawa. It got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition and 2017 Special Edition.

I visited here around 11:30 on a weekday. The ramen restraunt with an atmosphere of a traditional ramen restraunt was large. An atmosphere of the Showa period was good. All seats were table seats, so I guess that even family customers enjoy meals. A parking lot was vacant, and the restaurant was vacant, too, but the parking lot became full when 11:40 past. Visitors came to the restaurant one after another, too. The Hachiya was popular, after all.

ASAHIKAWA
Asahikawa (旭川) that about 340,000 people live is the 2nd largest commercial city in Hokkaido, and has flourished as the center of the North Hokkaido area. Woodworks have been prosperous since the old days, and furniture is famous. Because water is clear, a liquor such as sake of Otokoyama (男山) and Godo Shusei (合同酒精) are famous, too. Popular tourist attractions such as Asahiyama Zoo (旭山動物園) and Biei (美瑛) are around the Asahikawa, so a lot of tourists use tourist bases in the North Hokkaido. As for a climate, the Asahikawa is located in Kamikawa Basin, the largest basin in the Hokkaido, so it is hot that temperature rises to 30 degrees C in a summer, and it is cold that temperature falls to -25 degrees C in a winter, and it snow very hard, too. Ramen of Hokkaido
Ramen is a noodle soup dish topped with ingredients. It is said that Chinese noodles is the root of the ramen, and there are various theories, for example, Mr. Mistukuni Tokugawa (徳川光圀 * Mitokomon (水戸黄門)) ate the ramen in 1697 for the first time in Japan or the first ramen was that Keitaimen noodles (経帯麺) served in 1488 was written in Biryueken Diary (蔭涼軒日録). Noodle soup dishes were spread out in Japan because Nanking noodles (南京そば) was served in various China Towns, Japan. In Hakodate with a China Town, Yowaken (養和軒) served the Nanking noodles in 1884. In Sapporo, it is a root of Sapporo Ramen that a noodle soup dish was cooked by Mr. Wang Wen Zai (王 文彩), a chief chef of Takeya Shokudo (竹家食堂), in 1922. Soy Sauce Broth Ramen
I sat a table seat, and asked a waitress about ramen restaurant's recommendation, so she replied me "Soy Sauce Broth Ramen (醤油ラーメン). Customers can choose a quantity of fat between rich (こってり) or normal (普通)". I asked her recommendation, so she replied me "It is different depending on the person". Therefore I ordered the Soy Sauce Ramen with rich fat. The price was JPY 750.

About 10 minutes later, the Soy Sauce Ramen was served. A roasted pork fillet, bamboo shoots and green onions were on noodles. The appearance looked traditional Asahikawa ramen, but the color of soup was darker! The soup was made from burning lard (焦がしラード) and double soup mixed pork bone soup stock with fishery product soup stock. Of course the noodles wewe made by the Kato Ramen Noodle-making Factory.




I had a sip of soup immediately. It was good old taste for a person from North Hokkaido. It was not salty than I expected. The soup changed in color from brown to amber when I stirred the soup. It was Intriguing! When I drank up the soup, letters of "Thank you (ありがとう)" in Japanese appeared on the bottom of a bowl. It was Intriguing, too! The noodles went well with the soup, and it was tasty. Thanks for the tasty ramen!
