[Uocchi in Kushiro] Rich Taste Shrimp Sauce Broth Ramen

Ramen Studio Uocchi (ラーメン工房・魚一) is a popular ramen restaurant founded in 2004 in Tancho Market (丹頂市場) adjacent to Washo market (和商市場), Kushiro city and is near Kushiro Station. Mr. Mamoru Yoshiizumi (吉泉 守) is a ramen restaurant owner. The Uocchi given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition is famous for serving Fish Sauce Broth Ramen (魚醤ラーメン). Speaking of the fish sauce, it reminds me of Thai Nam Pla, but it is homemade soy sauce made from Saury and Herring.
The Uocchi opens a business at a part of the Tancho Market with a vegetable store and a fish merchant. The ramen restaurant is not large, and only L-shaped counter seats are provided. I guess that family customers and a large number of cutomers may not enjoy meals in busy time. Their business hour starts at 09:00. Visitors can eat ramen in the morning.

Kushiro (釧路) that about 170,000 people live is the 5th largest fisheries city in Hokkaido, and is one of regional hub cities of the Eastern Hokkaido area. The Kushiro became incorporated with Akan town (阿寒) and Onbetsu (音別) in 2005, and has became the 3rd largest city by area in the Hokkaido. In Japan, it is the 7th latgest city by the area. The Kushiro is also well-known as a tourist city with rich nature, and has 2 very famous national parks, Kushiro-Shitsugen wetland (釧路湿原), the largest wetland in the Japan, and Lake Akan (阿寒湖) consisted by primeval forests and lava. In addition, the beautiful sunset can be seen, too, and the Kushiro is one of the three major places to see the beautiful setting sun in the world together with Manila in Philippines and Bali in Indonesia. Ramen of Hokkaido
Ramen is a noodle soup dish topped with ingredients. It is said that Chinese noodles is the root of the ramen, and there are various theories, for example, Mr. Mistukuni Tokugawa (徳川光圀 * Mitokomon (水戸黄門)) ate the ramen in 1697 for the first time in Japan or the first ramen was that Keitaimen noodles (経帯麺) served in 1488 was written in Biryueken Diary (蔭涼軒日録). Noodle soup dishes were spread out in Japan because Nanking noodles (南京そば) was served in various China Towns, Japan. In Hakodate with a China Town, Yowaken (養和軒) served the Nanking noodles in 1884. In Sapporo, it is a root of Sapporo Ramen that a noodle soup dish was cooked by Mr. Wang Wen Zai (王 文彩), a chief chef of Takeya Shokudo (竹家食堂), in 1922. Houran (芳蘭), a branch of the Takeya Shokudo, opened a business in 1933 in Asahikawa. Asahikawa Ramen, Sapporo Ramen and Hakodate Ramen called the 3 Major Ramen in Hokkaido were born. Shrimp Sauce Broth Ramen
I visited here around 15:30 on a weekday. Their end of business hour was at 16:30, and I arrived here just in time. 2 groups of preceding customers enjoyed their meals. I sat at a counter seat, and asked a waitress about ramen restaurant's recommendation, so she replied me "Shrimp Sauce Broth Ramen (エビ醤ラーメン)". The soup mixed the fish sauce broth with shrimp can be savored. In addition, customers can choose a light taste or a rich taste. The light taste is chicken soup stock. The rich taste is chicken soup broth added pork bone soup stock and vegetable soup stock, and Umami taste increases. She said "I recommend the rich taste if you like Sapporo Ramen". I ordered it. The price was JPY 880. Customers can choose thin noodles or thick noodles, too. Since I was in the Kushiro, I chose the thin noodles.
About 10 minutes later, the Shrimp Sauce Broth Ramen was served with a dish of pickled vegetables. Shrimps, roasted pork fillets, a dried laver, bamboo shoots, green onions, fried bean sprouts, cabbages and ground meats were on the noodles. Ingredients were rich.
I had a ship of soup immediately. The soup was tasty, and the taste of the shrimp and something spreaded in my mouth. In addition, I imagined that the rich taste was too salty and fatty soup, but it was not so. I felt the right expression added Umami. The noodles went well with the soup, and those were delisious!
After eating the half ramen, I added vinegar to the soup. The taste turned into mild. It was intriguing! An explanation that it was twice tasty was written on a menu, so the words were not lies. Thanks for the tasty ramen!
