[Ramen Noodle Soup of Hokkaido] Many Tasty Ramen Can Be Savored in Various Places of Hokkaido

Ramen is a noodle soup dish topped with ingredients. It is said that Chinese noodles is the root of the ramen, and there are various theories, for example, Mr. Mistukuni Tokugawa (徳川光圀 * Mitokomon (水戸黄門)) ate the ramen in 1697 for the first time in Japan or the first ramen was that Keitaimen noodles (経帯麺) served in 1488 was written in Biryueken Diary (蔭涼軒日録). Noodle soup dishes were spread out in Japan because Nanking noodles (南京そば) was served in various China Towns, Japan. In Hakodate with a China Town, Yowaken (養和軒) served the Nanking noodles in 1884. In Sapporo, it is a root of Sapporo Ramen that a noodle soup dish was cooked by Mr. Wang Wen Zai (王 文彩), a chief chef of Takeya Shokudo (竹家食堂), in 1922. Houran (芳蘭), a branch of the Takeya Shokudo, opened a business in 1933 in Asahikawa. Asahikawa Ramen, Sapporo Ramen and Hakodate Ramen called the 3 Major Ramen in Hokkaido were born. But current ramen do not succeed to the taste of those ramen.

After that, ramen restaurants and ramen stalls increased in various places of the Hokkaido, and the taste of ramen has advanced. Due to adjust some local reasons, soy sauce broth has become a basic taste in the Asahikawa Ramen, and miso broth has become a basic taste in the Sapporo Ramen, and salt broth has become a basic taste in the Hakodate Ramen. Instant noodles named each name were sold, so those have been recognized as famous ramen brands by most of Japanese. Kushiro Ramen with fishery product soup stock and Muroran Curry Ramen have been making efforts for many years to catch up with those brands. Those attract people’s attention as the 4th place ramen in the Hokkaido. Types of noodles and soup stock are different depenfing on various places, so local ramen gets a following by liking and closeness.

Except those ramen brands, various ramen have came to be eaten recently in various area of the Hokkaido. There are a lots of well-known ramen restaurant as well as those ramen brand, so I think that the Hokkaido has a wide variety of ramen. A lots of ramen restaurants were evaluated by MICHELIN Hokkaido 2017 Special Edition. Miraku (味楽) in Rishiri, Takaraya (たからや) in Wakkanai, Kaiei Ramen (海栄らーめん) in Rumoi, Hachiya 5jo Establishment Branch (蜂屋 五条創業店) in the Asahikawa, Namishibuki Kitami Branch (波飛沫 北見店) in Kitami, Namishibuki Head Office (波飛沫 本店) in Shari, Tomikawa (とみ川) in Furano, Kirara (きらら) in Nanporo, Niboshi Ramen Nakajima (煮干らぁめん なかじま), Fujiya Noodle (ふじ屋 Noodle), Men-Eiji Hiragishi Base, Menya 169 (麺屋 169), Saimi (彩未), Nanabe (菜々兵衛), Shingetsu (信月), Mokuyobi (木曜日) and Wabisuke (侘助) in the Sapporo, Rei (麗) in Chitose, Ippontei (一本亭) in Toya and Katusji (勝二) in Rankoshi were given the Bib Gourmand by MICHELIN Hokkaido 2017 Special Edition.

Asahikawa ramen bases on double-soup made from seafood and pork bone or chickens, and is famous for soy sauce broth soup, and of course salt broth ramen and miso broth ramen can be ordered at common ramen restraunts, too.

Curled middle thick noodles made by Kato Ramen (加藤らーめん), Fujiwara Making-Noodles Factory (藤原製麺) and Sudo Making-Noodles Factory (須藤製麺工場) are often used. Green onions, bamboo shoots, roasted pork filets are commonly used as topping ingredients. Lard is used not to miss heat of ramen, and fat film is made on the surface of soup, and it plays a role as a cover. This is a special feature of ramen in the northern part of Hokkaido. By the way, about 500 ramen restraunts and a ramen commercial facility open a busness in the Asahikawa, too. Asahikawa Ramen Village becomes popular with overseas tourists in particular.

The Hachiya 5jo Establishment Branch got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2017 Special Edition. The Baikoken Head Office, the Ichikura Head Office, the Santoka Head Office and the Yotsuba were given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition.

Speaking of Ganso Asahikawa ramen, the soy sauce broth ramen is too famous. It may be said that it is a traditional taste. Hachiya (蜂屋), Tenkin (天金), Aoba (青葉), Mizuno (みづの), Tsuruya (つるや), Baikoken (梅光軒), Ichikura (一蔵) and so on are famous. My visited restraunts are as follows.

Ganso Asahikawa Ramen Ichikura (元祖旭川らーめん 一蔵) is a popular ramen restraunt run by Kuramoto corp. (株式会社 蔵元) based in Asahikawa city. Mr. Hideyuki Maeda (前田 秀幸), a chairman, established it in 1990. They were given the Bib Gourmand by MICHELIN GUIDE Hokkaido 2012 Special Edition. The Ichikura is famous for serving ramen made stock from dried chum salmon produced in Hokkaido, and I guess that it is very rare. The head office along 3 Jo-dori street is relatively near Asahikawa Station, and branch restraunts open a business in Fukagawa and Sapporo. Article is here

Asahikawa Daikichi Ramen

Asahikawa Daikichi Ramen (旭川大吉ラーメン) is a popular ramen restaurant founded in 1983 in Hokumon-cho, Asahikawa city, and is near Asahikawa Hokumon Post Office (旭川北門郵便局). Mr. Eiji Yoshida (吉田 英治) is a ramen restaurant owner, and he also assumes a chairman of Asahikawa Ramen-no-Kai (旭川ラーメンの会). The Asahikawa Daikichi Ramen is well-known for serving various types of ramen such as Yogurt Ramen (ヨーグルトラーメン), Salt Malted Rice Broth Ramen (塩麹ラーメン), Pumpkin Ramen (かぼちゃラーメン), Lemon Ramen (レモンラーメン), and contributes to the Asahikawa Ramen’s development. They give customers JPY 100 off from 11:00 to 11:30, and are crowded with local people at lunchtime. Article is here

Tsuruya

Ramen Senmon Tsuruya (ラーメン専門 つるや) is a long-established ramen restaurant founded in 1972 in Asahikawa city, and is near Asahikawa-Yojo Station. Tsuruya Hosoki Corp. runs the ramen restaurant, and Mr. Shinichi Koya (古屋 真一) is a company president. They won the 2nd Asahikawa Ramen Grand Prize (第2回北海道経済旭川ラーメン大賞) held by Hokkaido Economy. So they are a very popular ramen restaurant. By the way, their Miso Broth Ramen (味噌ラーメン) won the award at that time. New Home Run

New Home Run (ニューホームラン) is a long-established ramen restraunt with a history of about 40 years in Toyooka, Asahikawa city, and is relatively near Asahikawa Ryukoku Senior High School (旭川龍谷高校). The second owner, a 77 years old woman, runs the ramen restraunt by herself. The New Home Run is popular for serving good old Asahikawa Ramen for a reasobale price. I would often visit here if I was a student. In fact, some Asahikawa Ryukoku Senior High School students come. Article is here

Baikohke Head Office

Baikohken (梅光軒) is a long-established ramen restraunt in Asahikawa city. Mr. Hiroyuki Inoue (井上 弘之) established it in 1969. Ocean corp. runs it, and Mr. Masayuki Inoue (井上 雅之) is a comapny president at present. The Baikohken won the 1st Asahikawa Ramen Grand Prize held by Hokkaido Economy (第1回北海道経済旭川ラーメン大賞), and was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. A lot of customers come to the popular ramen restraunt. The head office is along Asahikawa Heiwa Street Shopping Park (旭川平和通買物公園) along Asahikawa Station, and branch restraunts open a business in the Asahikawa, Sapporo, New Chitose Airport, Marunouchi, Chiba and Tomigusuku. In addition, they also have overseas ramen restaurant as well as the Japan, and some branch ramen restaurants open a business in Singapore, Taiwan, Hong Kong, Thailand, Vietnam and United States. Mizuno

Shoga Ramen Mizuno (生姜ラーメン みづの) is a long-established ramen restaurant founded in 1965 in Asahikawa city, and is near Tokiwa Park and a traffic circle. Mr. Ryuji Mizuno (水野 龍司) is a restaurant owner now, and the Mizuno is well-known for serving Soy Sauce Broth Ginger Ramen (生姜ラーメン). Because the temperature sometimes gets down to 30 C below zero in the Asahikawa in a winter, I suppose that ramen using ginger that is effective for warming a body is popular with Asahikawa people, so a lot of customers come to savor it. Tenkin 4jo Branch

Ramenya Tenkin (らーめんや天金) is a long-established ramen restraunt run by Tenkin Foods corp. in Asahikawa city. Mr. Norimitsu Nobuta (信田 憲満) established it in 1952. Ms. Nanako Fujita (藤田 奈々子) is a company president at present. The Tenkin is one of the most famous ramen restraunts in the Asahikawa. Their family line also runs Izakaya and a Japanese restraunt in the Asahikawa. I guess that do not they have the head office, but has 2 branch restraunts, 4jo Branch (4条店) and Asahikawa Ramen village Branch (あさひかわラーメン村店). Article is here

Hachiya Head Office

Hachiya (蜂屋) is a long-established ramen restaurant run by Hachiya corp. in Asahikawa city. Mr. Enao Kato (加藤 枝直) established it in 1947. Naosumi Kato (加藤 直純) is a company president at present. Originally, the Hachiya was derived in an ice cream shop using honey. * The bee means “Hachi (蜂)” in Janapese. Their name is named after the honey. Mr. Kumahiko Kato (加藤 熊彦), Enao’s elder brother, established Kato Ramen Noodle-making Factory (加藤らーめん), one of the most famous noodle-making factories in the Asahikawa, and the Hachiya laid the foundation of Asahikawa Ramen with the Kato Ramen. The foundation year of the Hachiya is same as Aoba (青葉), a famous ramen restaurant in the Asahikawa, and it is well-known as one of roots of the Asahikawa Ramen. The head office is near Asahikawa Ginza Mall (旭川市銀座商店街), and has a branch ramen restaurant. 5Jo Establishment Branch (五条創業店) opens a business in the Asahikawa. Aoba Head Office

Asahikawa Ramen Aoba (旭川らぅめん 青葉) is a famous long-established ramen restaurant founded in 1947 in Asahikawa city. Mr. Yuichi Murayama (村山 有一) is a ramen restaurant owner at present. The foundation year is same as Hachiya (蜂屋), a famous long-established ramen restaurant in the Asahikawa, and the Aoba is well-known as one of the root of Asahikawa Ramen. Unexpectedly, miso broth ramen becomes popular in the Asahikawa, too. Furuki (ふるき), Yoshino (よし乃), Daidaiya (橙ヤ), Himawari (ひまわり) and so on are famous. My visited restraunts are as follows.

Ramen Senmon Himawari (ラーメン専門 ひまわり) is a popular ramen restaurant founded in 1987 in Asahikawa city. Mrs. Hitomi Asaka (浅香 仁美) is a restaurant owner at present. The head office is in Parupu-cho, and is relatively near Shin-asahikawa Station (新旭川駅). Higashi-takasu Branch used to open a business, but only the head office opens a business now. The Himawari is well-known for serving Hormone Ramen (モルメン) mixed ramen with broiled pig innards, and is also famous for beautiful restaurant owner and waitresses. Article is here

Furuki

Furuki (ふるき) is a popular ramen restaurant in Midorigaoka, Asahikawa city, and is relatively near Asahikawa Medical University Hospital and Midorigaoka Station. Mr. Mamoru Furuki (古木 守) established the ramen restaurant in 1982. Miso Broth Ramen has a good reputation, so a lot of visitors come to savor the taste. They open a business only at lunchtime, about from 11:00 to 15:00. Regular closing days are Sunday, Monday and Tuesday. Article is here

Yoshino Head Office

Miso Ramen Yoshino (みそラーメンのよし乃) is a long-established ramen chain based in Asahikawa city, and Mr. Tsutomu Urano established it in 1968. Speaking of Asahikawa Ramen, Soy Sauce Broth Ramen is famous. But the Yohsino is famous for Miso Broth Ramen as its name suggests. The head office is in Toyooka, Asahikawa, and some branch restaurants and franchise restaurants open a business in the Asahikawa, Kitami, Kamikawa and Sapporo. Salt Broth Ramen Type

Salt broth ramen is no lightweight. The Santoka (山頭火) and Sugawara (すがわら) are famous. The Santoka develops a lot of branches in the world, and they spread a taste of Asahikawa ramen. My visited restraunts are as follows.

Ramne Santoka (らーめん山頭火) is a popular ramen chain restaurant run by Ab-out, corp (株式会社アブアウト). in Asahikawa city. Mr Hitoshi Hatanaka (畠中 仁), a chairman, established the ramen restaurant in 1988. The head office given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition is near Asahikawa station, and some branch ramen restaurants open a business in the Asahikawa, Sapporo, Biei, Sendai, Morioka, Harajuku, Gotanda, Shibuya, Shinjuku, Koshigaya and Naha in Japana. In addition, they also have overseas ramen restaurant as well as the Japan, and some branch ramen restaurants open a business in United States, Canada, Hong Kong, Taiwan, Singapore, Malaysia, Philippines, Thailand and South Korean. Sugawara Head Office

Ramen Sugawara (ラーメンすがわら) is a long-established ramen restraunt founded in 1974 in Asahikawa city, and is near Asahikawa City Hall. Enfoods corp. runs it, and Mr. Daisuke Sato (佐藤 大輔) is a company president. The Sugawara used to have some branch ramen restraunt, but only the head office opens a business now. Speaking of Asahikawa Ramen, Soy Sauce Broth Ramen is famous, but Salt Broth Ramen of the Sugawara has a good reputation. Article is here

Asahikawa Ramen Village is a ramen commercial facility founded in 1996 at a part of shopping commercial facility named Powers, Nagayama, Asahikawa, and is relatively near Minami-nagayama Station. 8 famous ramen restrauntsn in the Asahikawa open a business. Tourists can savor various ramen only here.

Sapporo Ramen

Sapporo ramen bases on pork bone soup stock. Miso broth ramen is famous. Of course, salt broth ramen and soy sauce broth ramen are also served. But a type of soup is varied, and is outside of the box lately. I guess that the Sapporo ramen are roughly divided into miso broth ramen type, long-establish ramen restraunt type, creamy chicken broth soup type, shrimp ramen type, dried sardine soup type, vegetable potage soup type and other. Curled thick egg noodles made by Nishiyama Making-noodles Factory (西山製麺), Morizumi Making-Noodles Factory (森住製麺), Sagamiya Making-Noodles Factory (さがみ屋製麺), Kanejin Foods (カネジン食品), Kobayashi Making-Noodles Factory (小林製麺) and so one are commonly used. Green onions, bamboo shoots, roasted pork filets, fried bean sprouts, corns, a butter and etc are commonly used as topping ingredients. About 1000 ramen restraunts open a business in the Sapporo, and compete each other. In addition, ramen commercial facilities, Sapporo Ramen Republic (札幌ら~めん共和国) and Ganso Sapporo Ramen Street (元祖さっぽろラーメン横丁), are popular, too.

The Niboshi Ramen Nakajima, the Fujiya Noodle, the Men-Eiji Hiragishi Base, the Menya 169, the Menya Saimi, the Menya Nanabe, the Ramen Shingetsu, the Ramen Mokuyobi and the Ramen Wabisuke got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2017 Special Edition. The Mendokoro Maruha Beyond, the Garyumenbu Hien, the Ramen SHinwa and the Ramen Chikuma were given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition.

Amewa-yasashiku (雨は、やさしく) is a popular ramen restraunt based in Shiroishi ward, Sapporo city. The Amewa-yasashiku means “Tender Rain” in English. Mr. Takuya Higashimoto (東元 卓哉), a company president, established it in 2012, and AME corp. runs it. The Amewa-yasashiku is famous for serving ramen using white chicken liver paste. Yoshiyama Shoten Head Office

Yoshiyama Shoten (吉山商店) is a popular ramen restraunt based in Higashi ward, Sapporo city. Mr. Yoshimi Sekiyama (関山 芳美), a company president, has established it since 2006, and Yoshiyama Shoten corp. runs it. Originally, he used to be concerned with Santoka (山頭火), a famous Asahikawa ramen restraunt. Saimi

Menya Saimi (麺や彩未) is a popular ramen restaurant in Misono, Toyohira ward, Sapporo City, and is relatively near Sapporo Subway Toho Line Misono Station and Tsukisamu Park (月寒公園). Mr. Masahiko Oku (奥 雅彦) trained his cooking skill at Sumire (すみれ), a famous ramen restraunt, and has established the Saimi since 2000. He is only a few people allowed to become independent by the Sumire. They got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2017 Special Edition. Sumire Head Office

Sumire (すみれ) is a popular ramen restraunt based in Nakanoshima, Toyohira ward, Sapporo city. Sumire corp. runs it, and Mr. Nobuyoshi Muranaka (村中 伸宜) is a company president. Mrs. Akiko Muranaka (村中 明子), his mother, established Sumire (純連) in 1964. The head office is in the Sapporo, and branch ramen restraunts open a business in the Sapporo and Yokohama. The Sumire is well-known as a long-established ramen restraunt of Sapporo Miso Broth Ramen. A lot of ramen restraunts are affected by the Sumire, and a lots of pupils also appear in crowds. Junren Head Office

Sapporo Junren (さっぽろ純連) is a popular ramen restraunt based in Hiragishi, Toyohira ward, Sapporo city. Mr. Noriyoshi Muranaka (村中 教愛) established it in 1987, and RENFOODS corp. runs it. Mr. Takanori Yamagishi (山岸 敬典) is a company president at present. Mrs. Akeko Muranaka (村中 明子), the founder’s mother, established Sumire (純連) in 1964, and the Junren successed her taste. The head office and a brach are in the Sapporo, and the Junren is well-known as a long-established ramen restraunt of Sapporo Miso Broth Ramen. Kiraito (喜来登) is a popular ramen restaurant in Tanukikoji (狸小路), Chuo ward, Sapporo city, and is located between Odori Park (大通公園) and Susukino (ススキノ). They are famous for serving Miso Broth Ramen with an extra large portion of green onions. I do not know detailed history of the Kiraito, but I heard that they started as a ramen restaurant branch of Itosue (糸末) that was one of pioneer ramen restaurants of miso broth ramen together with Sanpei (三平). Then they became independent. In that kind of meaning, it can be said that their ramen inherits traditional Sapporo miso broth ramen. Article is here

Aji-no-Sanpei (味の三平) is a long-established ramen restaurant in Chuo ward, Sapporo city, and is near Odori Park (大通公園). This ramen restaurant locates at a building specialized in stationery called Daimaru Fujii central (大丸藤井セントラル), so visitors can not find it if they imagine an old building for the long-established ramen restaurant. Mr. Morihito Omiya (大宮守人) that cooked Miso Broth Ramen (味噌ラーメン) for the first time started a ramen stall in 1950, so the Sanpei is well-known for the originator of the Miso Broth Ramen. Aji-no-Seichan (味の清ちゃん) is a long-established ramen restraunt in Misono, Toyohira ward, Sapporo city, and is near Subway Toho Line Misono Station and Tsukisamu Park. They started a business as a ramen stall in 1942. An over 90 years old woman and her son run it, and it is famous for a popular ramen restraunt of Sapporo Ramen. The Seichan was featured on Genius! Ramen Horyu (ラーメン寶龍) is a long established ramen chain based in Susukino, Chuo ward, Sapporo city. Mr. Yukio Natsukawa (夏川 幸雄), a chairman, established it in 1957. Horyu corp. runs it at present. The head office is in the Susukino, the Sapporo, and about 50 branch restaurants and franchise restaurants open a business in the Sapporo, Kushiro, Obihiro, Kitami, Abashiri, Tomakomai, Bibai, Ebetsu, Chitose, Iwanai, Bihoro, Mukawa, Hidaka, Niikappu, Urakawa, Erimo, Shintoku, Shimizu, Nakasatsunai, Makubetsu, Ikeda, Honbetsu, Ashoro, Urahoro, Shiranuka, Rausu, Akita, Ishikawa, Toyama, Fukui, Tochigi, Ibaraki, Kanagawa and Osaka. In the ramen restraunts, Shintoku Branch (新得店) and Shimizu Branch (清水店) were placed in the MICHELIN GUIDE Hokkaido 2012 Special Edition. As for a characteristic of the Horyu, all the chain ramen restraunts use same based seasonings, but they change taste to arrange suitable cooking ingredients depending on each regions. Creamy chicken broth soup is creamy taste, and is light taste and very creamy, but it has a good flavor and becomes popular. Nanabe (菜々兵衛), Keserasera (けせらせら), Q, Sapporo Akaboshi (サッポロ赤星) and so on are famous. My visited restraunts are as follows.

Q

Q (キュー) is a ramen restraunt and a restraunt sold grilled chicken on a skewer in Chuo ward, Sapporo city, and is near Sapporo Clock Tower (札幌時計台). At same place, Ramen is served at lunchtime and a part of dinnertime, and a grilled chicken on a skewer is served at the dinnertime. In addition, restraunt managers are different at each time zones. They try new ideas. The restaurant is a little hard to find, but a signboard appears in front of an entrance, and the restaurant is on the 1st basement floor of Rindo Building (りんどうビル). Now each restraunts are renamed as “Yakitori, Wine, Sake, Q (ヤキトリ、ワイン、日本酒、Q)” and “Japanese Ramen Noodle Lab Q”. Article is here

Hareruya

Menya Hareruya (麺や ハレル家) is a popular ramen restraunt founded in 2011 in Higashi ward, Sapporo city, and is near Sapporo Station and Sapporo central Post Office (札幌中央郵便局). A solo black building surrounded by parking lots is a mark. The Hareruya is a sister restraunt with Hareruya and Washoku Bal Hareruya (和食バル はれるや) near Odori Park. The ramen restraunt with a relaxed atmosphere is not large, and the interior decoration made of woods is felt warm. L-shaped counter seats and table seats are provided, so I guess that even family customers enjoy meals. But I suppose that a large number of customers can hardly enjoy meals. Article is here

Mr. Shuji Maeda (前田 修志), a ramen restraunt owner, has established it since 2010.The Hien was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. Menya Keserasera (麺や けせらせら) is a popular ramen restraunt founded in 2008 in Kita ward, Sapporo city, and is adjacent to Taihei Funeral Hall (太平斎場), and is relatively near Yurigahara Station (百合が原駅) and Yurigahara Park (百合が原公園). The Keserasera (Que Sera Sera) means “Whatever will be, will be” in Spanish. Mr. Yoichi Nakayama (中山 洋一) is a ramen restraunt owner. The Keserasera is well-known for serving thick taste ramen made from Creamy Chicken Broth (鶏白湯). The ramen restraunt with an atmosphere such as a typical ramen shop is not large, and I guess that the ramen restraunt is full if 10 people enter the ramen restraunt. Mr. Hiroshi Hori (堀 寛), a company president, has established it since 2008, and Natusuru corp (株式会社菜鶴). runs it. (株式会社一幻フードカンパニー) runs it at present. The Ichigen is famous for serving Shrimp Ramen (えびそば) using rich shrimp soup stock. The head office near Higashi-honganji Branch Temple (東本願寺別院会館) is in the Sapporo, and branch restraunts open a business in New Chitose Airport, Shinjuku, Yaesu and Roppongi. Men-no-Hinauta (麺のひな詩) is a popular ramen restraunt in Chuo ward, Sapporo city, and is near Sapporo Factory. Mr. Osamu Shoji (庄司 修) established it in 2009. The ramen restraunt is famous for serving Shrimp Ramen (えびラーメン). He challenged new ramen such as Dipping Noodles or Tail Soup Ramen positively. The name of ramen restraunt turned into its name called Ebidoro (えびどろ) on weekend, and served only Ebidoro Ramen (えびどろラーメン). Ganso Ebisoba Enishiya (元祖海老そば 縁や) is a popular ramen restaurant in Atsubetsu ward, Sapporo city, and is near Shin-sapporo Station. Mr. Eiji Nomoto (野本 栄二) established it in 1997. Button corp. (ぶっとん株式会社) runs it at present. The Enishiya is famous for cooking Shrimp Ramen (海老そば) for the first time. The Shrimp Ramen is ramen mixed sweet shrimp soup stock with seasoning such as miso, salt and soy sauce. In the ramen contest called “Fight! Ramen Gateway to Success (激突!ラーメン登竜門)”, He shown the Shrimp Ramen at the ramen museum, Shin-Yokohama, and won the finalist, so the shrimp ramen was born. Mr. Keisuke Ibaraki (茨木 圭介), a ramen restraunt owner, has established it since 2012. The origin of strange name is the reason why he used to open a business only on Thursday when a soup curry restraunt “Curry Soul Destroyer (カレー魂 デストロイヤー)” closed a business on a regular closing day. They are well-known for serving only rich taste soy sauce ramen. Their business hour are from 11:00 to 15:00, and it is short, so a line must be expected at lunchtime. Mr. Jun Furukawa (古川 淳), a company president, has established it since 2006. The Men Eiji Hiragishi Base was given the Bib Gourmand by MICHELIN Hokkaido 2017 Special Edition, and got the 1st place in Ramen Walker Grandpix Hokkaido 2016. He trained his cooking skills at some ramen restraunts such as Ramen Tetsuya (らーめんてつや), a famous ramen restraunt in the Sapporo. Hakodate Ramen

The Hakodate Ramen bases on double-soup made from pork bone and chicken. It is common ramen that soup is clear and salt broth in the Hakodate. Straight medium thick noodles made by Okada Making-noodles Factory (岡田製麺) and so on are used, and roasted pork filets, bamboo shoots, green onions, spinach and seafood are commonly used as topping ingredients. In Hakodate’s ramen restaurants, salt broth ramen is sometimes served without permission if customers order “Ramen” or “Chinese Noodle Soup (支那そば)”. Speaking of the ramen, it is just salt broth ramen in the Hakodate. There are a lot of ramen restaurants without miso broth ramen and soy broth sauce ramen on a menu. Ebisuken (エビス軒) is a long-established ramen restaurant founded in 1929 in Matsukaze-cho, Hakodate city, and is near Hakodate Station. Tasty Miso Broth ramen (味噌ラーメン) has a high reputation among ramen restaurants in the Hakodate. The Ebisuken was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. An owner, the third-generation owner, trained his cooking skill at Tsukimiken (月見軒), Sapporo, and tried various miso broth ramen of ramen restaurants such as Aji-no-Sanpei (味の三平), the founder of miso broth ramen, and Tomiko (富公) which was said to be legendary ramen restaurant in those days. Therefore he have been reproducing the ramen taste learned by him in the Sapporo, visitors that has knew the ramen taste in those day has visited here to eat a good old taste miso broth ramen. A certain familiar customer in the Sapporo sometimes told the owner “I come to eat genuine miso broth ramen with his grand child”. Green onions, bamboo shoots, roasted pork filets and a dried laver are commonly used as topping ingredients. The Kushiro ramen is served at about 100 ramen restraunts in the Kushiro. Ramen Studio Uocchi (ラーメン工房・魚一) is a popular ramen restaurant founded in 2004 in Tancho Market (丹頂市場) adjacent to Washo market (和商市場), Kushiro city and is near Kushiro Station. Mr. Mamoru Yoshiizumi (吉泉 守) is a ramen restaurant owner. The Uocchi given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition is famous for serving Fish Sauce Broth Ramen (魚醤ラーメン). Speaking of the fish sauce, it reminds me of Thai Nam Pla, but it is homemade soy sauce made from Saury and Herring. Article is here

Kawamura

Kawamura (河むら) is a popular ramen restaurant based in Kushiro city. It has been established since 1989. Mr. Junya Kawamura (河村 潤也) is a ramen restaurant owner at present. The Kawamura was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. They used to have branch restaurants, but only the head office in Suehiro-cho called the lragest entertainment district in the Kushiro opens a buisiness now. The founder trained his cooking skill for about 15 years at Ginsui (銀水), a long-established ramen restaurant called one of roots of Kushiro Ramen, so the Kawamura is famous for serving the traditional Kushiro ramen. Maruhira

Maruhira (まるひら) is a long-established ramen restaurant founded in 1959 in Urami, Kushiro city, and is near Yonemachi Park (米町公園). Mr. Masao Hirano (平野 正夫) is a ramen restaurant owner at present. The Maruhira is famous for serving traditional Kushiro Ramen, and a lot of local people and tourists come. The ramen restaurant on the 1st floor of a solitary house is not so large, and looks new. Ginsui (銀水) is a long-established ramen restraunt founded in 1935 in Naniwa-cho, Kushiro city, and is near Kushiro Development and Construction Department. It is said that the Ginsui is the oldest ramen restraunt in the Kushiro, so I think that it is a root of Kushiro Ramen, and it is famous for serving the traditional Kushiro ramen. Muroran Ramen

The curry ramen is most famous in Muroran’s ramen. About 30 ramen restraunts serve the curry ramen in the Muroran. Each ramen restraunts cook original curry soup to go well with noodles. Curled noodles, roasted pork filets, vegetables, wakame seaweed are commonly used as topping ingredients. Of course, common ramen has been eaten since a long time. There are approximately 50 ramen restraunts in the Muroran. My visited restraunts are as follows.

Aji-no-Daio Muroran Head Office

Aji-no-Daio Muroran Head Office (味の大王室蘭本店) is a long-established ramen restaurant based in Muroran city. Mr. Hiroshi Koyanagai (小柳 弘) established it in 1971. After he trained his cooking skill under Mr. Ichiro Takahashi (高橋 一郎), the founder of Aji-no-Daio Tomakomai Head Office (苫小牧の味の大王総本店), in Iwamizawa city and became independent. It is said that the Aji-no-Daio Tomakomai Head Office produced Curry Ramen (カレーラーメン), and the Aji-no-Daio Muroran Head Office has spread the curry ramen in the Muroran. The Aji-no-Daio Muroran Head Office is run by Koyanagi Kikaku corp. (株式会社 小柳企画), and Mr. Tomiji Koyanagi (小柳 富資) is a company president at present. The head office is in Chuo-cho, the Muroran, and sister ramen restaurants open a business in Nakajima-cho, Chuo-cho, Higashi-muroran Station, Bibai. Mr. Tomiji plays a role of the chairman of Muroran Curry Ramen-no-Kai (室蘭カレーラーメンの会), and works to promote the Curry Ramen to place the 4th ramen of Hokkaido after famous three ramen, Sapporo Ramen (Miso Broth Ramen), Asahikawa Ramen (Soy Sauce Broth Ramen) and Hakodate Ramen (Salt Broth Ramen). About 30 ramen restaurants serve the curry ramen in the Muroran, and the curry ramen is well-known as a the comfort food of the Muroran. Article is here

Ganso Muroran Ramen Seikyoken (元祖室蘭ラーメン 清洋軒) is a long-established ramen reastraunt founded in 1935 in Funami-cho, Muroran city and is near Tokiwa Nursery School (常盤保育所). Since they profess themselves to be the originator of Muroran Ramen (The Ganso means “The originator” in Japanese), I guess that the Seiyoken may be founded very first in the Muroran. The ramen restraunt with an atmosphere such as a typical ramen restraunt is not so large. Ramen Jomon (らーめん縄文) is a popular ramen restaurant facing National Route 36 in Shinkai-cho, Tomakomai city, and is near Aeon Mall Tomakomai. Jomon corp. runs it, and Mr. Dai Takakuwa (高桑 大), a company president, has established it since 2001. Students of Komazawa University Tomakomai High School (駒大苫小牧), the only Japanese High School Baseball Tournament (甲子園) champion in Hokkaido, visit here, too. An one-storied building at a part of commercial districts is large, and the interior decoration has an atomosphere such as a stylish ramen restraunt. Counter seats, table seats and a small separate Japanese style room are provided, so I guess that even family customers may enjoy meals. But the ramen restraunt is often crowded with customers. Aji-no-Gojuban (味の五十番) is a long-established ramen restraunt founded in 1967 in Futaba-cho, Tomakomai city. Mr. Tokio Oka (岡 登喜夫) is a ramen restraunt owner at present, and he and his wife manage the ramen restraunt, and have been cooking ramen for nearly 30 years. They are known for serving tasty light taste ramen. When HKT48, a Japanese popular idol girl group, came to the Tomakomai, a part of members savored Gojuban’s ramen. Aji-no-Daio (味の大王) is a long-established ramen restraunt based in Tomakomai city. Aji-no-Daio corp. runs it, and Mr. Koichi Takahashi (高橋 浩一) is a company president at present. Mr. Ichiro Takahashi (高橋 一郎), the founder, established the Aji-no-Daio in Iwamizawa city in 1967. The Aji-no-Daio is famous for the origin of Curry Ramen (カレーラーメン) in Hokkaido. Mr. Hiroshi Koyanagai (小柳 弘), the founder of Aji-no-Daio Muoran Head Office (室蘭の味の大王), trained his cooking skill under Mr. Ichiro in the Iwamizawa, and became independent in Muroran city. Mr. Ichiro move his ramen restraunt from the Iwamizawa to the Tomakomai in 1971. They have no capital ties. Ramen Jogura (ラーメン じょぐら) is a popular ramen restraunt in Yoichi town located in the root of Shakotan Peninsula. It takes about 5 minutes from Yoichi Station to here on foot. Mr. Tadashi Kashiwazaki (柏崎 正) has established it since 2000. The Jogura means “A warehouse” in Hokkaido dialect. But I have never known it, so I guess that it is Hamakotoba (浜言葉 * dialect that fishing village speak). The Jogura was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. Yoichi Maehama Shrimp Ramen (余市前浜えびラーメン) served only from March to October is the most popular ramen. The owner is an ex-shrimp fishermen, and he serves ramen topped with grilled sweet shrimps. Rei

Menya Rei (麺や 麗) is a popular ramen restraunt founded in 2010 in residential area, Takadai, Chitose city, and is a little far away from Chitose Station, and is relatively near Suehiro Cemetery. The Rei is well-known for getting the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition and 2017 Special Edition. The ramen restraunt on the 1st floor of 2 story private house has always a line, and is not large. A novel logo mark catches visitors’ eyes. The interior decoration is not a typical ramen restraunt, but a cafe, so I am not surprized if they serve Italian dishes such as pasta or cheese dishes. Naporo Ramen Kiarara (南幌らーめん きらら) is a popular ramen restraunt at a residential area, Nanporo town located in the eastern part of Sapporo city. Mr. Toshiki Miura (三浦 敏樹), a ramen restraunt owner, has established it since 2003. He is also an administrative scrivener, so the Kiarara is a slightly strange ramen restraunt. Harukichi

Menya Harukichi (麺屋はる吉) is a popular ramen restraunt founded in 2008 in Taisho, Kitami city, and is near Ryokuryo High School (緑陵高校). Mr. Ryoji Beharu (邊春 良次) is a ramen restraunt. After he trained his cooking skill at Saimi (彩未), one of the best ramen restraunts in Hokkaido, and has become independent. He is only a few people allowed to become independent by the Saimi. The name of the Saimi is written on a noren. Speaking of the Saimi, they succeeded the taste of Sumire (すみれ), so the Harukichi is a Junsumi style (純すみ系) ramen restraunt. * Mrs. Akiko Muranaka (村中 明子) established Sumire (純連), and her sons succeeded the taste of mother’ ramen, and established Junren (純連) and the Sumire, so Akiko’s ramen are called the Junsumi style. An owner of the Saimi trained his cooking skill at the Sumire. The Harukichi was given the MICHELIN PLATE by MICHELIN Hokkaido 2017 Special Edition. Article is here

Namishibuki (波飛沫) is a popular ramen restraunt founded in 2008, and the head office is in Utoro, Shari town. The Namishibuki means “Sea spray” in Japanese. Mr. Hiroaki Kitabayashi (北林 弘明) is a ramen restraunt owner. He trained his cooking skill at Santoka (山頭火), a famous Asahikawa ramen restraunt, and became independent. It is said that the Namishibuki take from the taste of the Santoka’s Ramen. They have also a branch ramen restraunt founded in 2011 in Kitami, and Mr. Hikaru Kaida (開田 光) is a shop manager. Both of the head office and the Kitami branch got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition, so that is amazing! My visited ramen restraunt was the Kitami branch. Ekimae Kaiei Ramen (駅前海栄らーめん) is a popular ramen restraunt in Rumoi city located in the western part of Asahikawa city, and is near Rumoi Station. They got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition and 2017 Special Edition. The ramen restraunt is on the 1st floor of a 2 story multi-tenant building, and a surfboard is displayed at the entrance, so I guess that a ramen restraunt owner likes the sea. A popular ramen restraunt that Miraku (味楽) in Rishiri Island is the hardest to visit in Japan is reported in the media, so I suppose that the Futaba Shokudo also may be reported as the hardest popular ramen restraunt to visit in Japan in the media. Rishiri Ramen Miraku (利尻らーめん 味楽) is a popular ramen restraunt based in Rishiri island, and is near Kustugata Port (沓形港) and Kustugata-misaki Park (沓形岬公園). Mr. Esashiya Yoshitsugu (江刺家 美次), a ramen restraunt owner, has established it since 2007. The Miraku is famous for serving ramen using Rishiri Kombu (利尻昆布) with a good reputation as the highest quality kombu. They got the Bib Gourmand in MICHELIN GUIDE Hokkaido 2012 Special Edition and 2017 Special Edition. The Miraku is well-known for very short business time from 11:30 to 14:00, and the popular ramen restraunt that is the hardest to visit in Japan is also reported in the media. Ramen Kiichiro (らーめん喜一郎) is a popular ramen restraunt along National Route 235 in Niikappu town located in the southeastern part of Tomakomai city, and is relatively near Roadside Station Thoroughbred Road Niikappu (道の駅 サラブレッドロード新冠). Matsumoto Kiichiro Shoten (松本喜一郎商店) runs it, and Mr. Kenichi Matsumoto (松本 健一), a company president, has established the ramen restraunt since 2012. They also run a meat shop named “Kiichiro Meat (喜一郎MEAT)”, so I guess that they use fresh pork bone and meat to serve tasty ramen. The ramen restraunt is also famous for forming a line. The Niikappu with a lot of ranches is well-known as a production area of racing horses, so tourists as well as local people also stop by. Article is here

Ramen Mikan (らーめん みかん) is a popular ramen restraunt nearby Nantaru Market (南樽市場) in Shintomi-cho, Otaru city, and is relatively near Minami-otaru Station. An owner trained his cooking skill at Sumire (すみれ), a famous ramen restraunt, and became independent in 2004. The Mikan was named after Mikansei (未完成 * the uncompleted way of ramen) because he has not mastered the way of the ramen perfectly, and has been improving it step by step. The Mikan means “A mandarin orange” in Japanese, and I imagined it, But it is not even close to the truth. Mr. Masatoshi Hamada (浜田 雅功), a member of Japanese comedy duo Downtown, mistook the Mikan for Orange, so the ramen restraunt became more popular. Article is here

Ramen Shodai (らーめん初代) is a popular ramen restraunt based in Otaru city. Seva corp. (株式会社セヴァ) runs it, and Mr. Katsutoshi Ota (太田 勝敏), a company president, has established it since 1994. The origination of the name is that the real taste of the ramen is only during his lifetime if a ramen restraunt extends through successive generations. The Shodai means “The founder” in Japanese. Miso Broth Ramen has a good reputation. The head office is in the Ishikari, and a ramen restaurant branch opens a business in Susukino, Sapporo. Ramen Kagetora (らーめん影虎) is a sister ramen restaurant. I guess that those names are named after Mr. Shingen Takeda (武田信玄) and Mr. Kagetora Nagao (長尾景虎 * Before Kenshin Uesugi (上杉謙信)), warring lords, so as its company name suggests, I suppose that an owner love the Sengoku period in Japan. * The Sengoku means “Warring States period” in Japanese. Kouraiken (香来軒) is a long-established restraunt founded in 1953 in Saiwai-cho, Chitose city, and faces New Sun Road Shopping Street (ニューサンロード商店), and is relatively near Chitose Station. The restraunt is well-known for serving Salt Broth Chow Mein (炒麺). Ramen (ラーメン), Fried Rice (チャーハン), Pork Cutlet Rice Bowl (カツ丼) and Chow Mein (五目焼きそば) as well as the Salt Broth Chow Mein also have a good reputation. The restraunt on the 1st floor of 2 story building has an atmosphere such as a good old restraunt, and is not so large. Ramen Kitchen Naruto (ラーメンキッチンなると) is a popular ramen restaurant founded in 2009 in Seiryu, Obihiro city, and is near Obihiro Technical High School (帯広工業高校). The appearance of a building is not a typical ramen restaurant, and is like Italian restaurant. A noodle studio is build beside the building. Misuzu

Ramen Misuzu (みすゞ) is a popular ramen restraunt facing Hirokoji Shopping Street (広小路) in Obihiro city, and is relatively near Obihiro Station. Mizusu corp. has run it since 1986. The ramen restraunt is on 1st floor of a building, and a cafe named Misuzu (みすゞ) is on the 2nd floor of the same building, so I wonder if family people runs it. The Misuzu makes most of Japanese think of Misuzu Coffee (美鈴コーヒー), but I do not know whether those are connected with each other. By the way, a signboard says UCC coffee. Article is here

Tochirowo

Tochirowo (トチロヲ) is a popular ramen restraunt facing Obihiro-no-Mori Street (帯広の森通り) in a residential area, Minami-no-Mori, Obihiro city, and is near Minamicho Stadium (南町球場), and is far away from Obihiro Station. Ramen Sobo Fuji (らあめん創房藤) is a popular ramen restraunt in Otofuke town located in the northeastern part of Obihiro city, and is near Kenko House Kino Onsen (健康ハウス木野温泉) and Kino Golf Center (木野ゴルフセンター). Mr. Toshinori Abe (阿部 利徳), a ramen restraunt owner, moved from the Obihiro to the Otofuke in 2007. Asakusaken (浅草軒) is a long-established ramen restraunt founded in 1934 in an entertainment district, Umegae-cho, Nemuro city, and is loved by local people. Teshikaga Ramen Head Office

Teshikaga Ramen (弟子屈ラーメン) is a popular ramen restraunt based in Teshikaga town located in the northern part of Kushiro city, and is run by FBS corp. Mr. Kenichi Sugawara (菅原 憲一), a company president, has established it in Sapporo city since 2003. Their head office moved to go back to the origin of its name from the Sapporo to the Teshikaga in 2016. They are based in the head office to bring back the taste of old Teshikaga Ramen. Darumaya Abashiri Branch

Ramen Darumaya (ラーメンだるまや) is a chain ramen restraunt in Hokkaido. I have a little information about the Ramen Darumaya, and they are defferent from Darumaya (だるまや), a famous ramen restraunt in Niigata prefecture. I do not know where the head ofiice is, but some ramen restraunt branches open a business in Sapporo, Iwamizawa, Mikasa, Bibai, Takikawa, Kitami and Abashiri. The Ramen Darumaya is famous for serving Doro Ramen (ドロラーメン), and the ramen taste is different depending on the branches, so I wonder if they are franchise restaurants. Article is here

La Fleur

Restraunt La Fleur (レストラン ラ・フルール) is a restraunt on the 2nd floor of Roadside Station “Star Plaza Ashibetsu (スタープラザ芦別)” along National Route 38 in Shibetsu city located in the southwestern part of Asahikawa city, and is run by Starlight Hotel that is famous for Ashibetsu Onsen (芦別温泉). The restraunt is well-known for serving Gatatan (ガタタン), and Ramen, Fried Rice and Rice Bowls, and so on are also served. The Gatatan is a local speciality dish of the Ashibetsu, and is salt broth thick and stewed Chinese soup including vegetables, edible wild plants and seafood. Mr. Bungonosuke Murai (村井豊後之亮) repatriated from former Manchurian to the Ashibetsu after the war, and served the Gatatan at Chinese Restaurant “Koraku (幸楽)” for the first time. He got a hint from Manchurian home-cooked meal “Gedatang (疙瘩湯)”. The Koraku has been closed down, and Unfortunately, the well-known Gatatan Restraunt “Horaiken (宝来軒)” went out of business at the end of October, 2015. But the Gatata can be eaten at about 10 restaurants in the Ashibetsu. Article is here

Noburin

Noburin (のぶりん) is a popular restraunt founded in 2005 in Yasukuni, Ikutahara, Engaru town located in the northeastern part of Kitami city, and is near Yasukuni Station (安国駅). Mr. Nobuyuki Sato (佐藤 信行) is a restraunt owner. His nickname is the Noburin, so the restraunt is named after it. Local people often use the Noburin, and it is loved by them. Article is here

Asahi Shokudo

Asahi Shokudo (あさひ食堂) is a long-estbalished restaurant in Kamikawa town located in the eastern part of Asahikawa city, and is relatively near Kamikawa Station. Mr. Yasuo Kamata (鎌田 康雄), a restaurant owner, has established since 1970. They serve rice bowls, fried rice and so on, and ramen has a good reputation in particular. The Kamikawa town advocates that they serve the most tasty ramen in Japan because meltwater of Daisetsuzan Moundain Range are used in their soup and noodles, and they are proud of their ramen. Kamikawa-cho Japan’s Best Ramen Association (上川町ラーメン日本一の会) has been estblished, and the owner plays a role of the vice chairman, and works to promote the Kamikawa Ramen. Article is here

Inoue Shokudo

Inoue Shokudo (井上食堂) is a long-established restraunt founded in Showa era in Bifuka town between Asahikawa city and Wakkanai city, and faces National Route 40, and is near Arcs Bifuka Branch (アークス美深店), a supermarket, and Bifuka Station. Mr. Tomio Inoue (井上 富夫) is a restraunt owner at present. The restraunt on the 1st floor of a 3 story building has the appearance with an atmosphere of the Showa era. The interior decoration is old style, and there is small but a cozy raised seating place and a tatami-room. Counter seats and table seats are provided, so I guess that even family customers may enjoy meals. Mamiyado

Mamiyado (間宮堂) is a popular ramen restraunt run by Marusan Miura Shoji corp. (有限会社マルサン 三浦商事) in Soyamisaki Park (宗谷岬公園), Wakkanai city, and is known for a catch phrase “The more people go north, the better ramen is tasty (北へ行くほどラーメンがうまくなる)”. The building is located on a hill, so view from the ramen restraunt is good. Dishes using seafood such as a sea urchin rice bowl as well as the ramen are also served. By the way, they open a bussiness from mid April to mid November, and close a bussiness in a winter. Article is here
