[Maccarina in Makkari] Tasty Vegetables French Cuisine Savored by First Ladies in The World
Restaurant Maccarina (レストラン・マッカリーナ) is a popular French restaurant adjacent to Makkari Onsen (真狩温泉) in Makkari villege, Niseko, and is relatively near Yotei-no-Wakimizu (羊蹄の湧き水). The restaurant has been established since 1997, and Mr. Shinichi Sugaya (菅谷 伸一) acts as a chef, and is well-known as a restaurant with accommodations called "Auberge". They got one star in MICHELIN GUIDE Hokkaido 2012 Special Edition. When the Lake Toya Summit carried out in 2008, first ladies in the world savored their dishes, and deepened friendship each other.
Makkari Onsen (真狩温泉) is a hot spring place in Makkari village located in the southwestern part of Sapporo city, and is around 1 km away from the center of Makkari. Makkari Village Onsen Rest Center Makkari Onsen (真狩村温泉保養センター まっかり温泉) surrounded by fields is built on a small hill, and is adjacent to Maccarina (マッカリーナ), a famous restaurant served a meal using vegetables, and World Lily Garden (世界のユリ園). Yotei-no-Wakimizu (羊蹄の湧き水) that is one of 3 major springwater sites in Niseko is relatively near here. A stylish building was designed by Mr. Hiroshi Naito (内藤 廣), a famous architect, and Mr. Ikko Tanaka (田中 一光), a famous graphic desiner, bore art direction. They all have gorgeous faces. All seats are table seats, so I guess that family customers also enjoy meals.
Niseko (ニセコ) is the general term for towns and villages around Mt. Yotei (羊蹄山) in the southwestern part of Sapporo city, and contains Niseko town (ニセコ町), Kutchan town (倶知安町), Kyogoku town (京極町), Makkari village (真狩村), Kimobetsu town (喜茂別町), Kyowa town (共和町), Rankoshi town (蘭越町) and Iwanai town (岩内町). The Niseko means "A river in a gorge" in Ainu language, and the origin of the word is Niseko Anbetsu River (ニセコアンベツ川). In a winter, skiing and snowboarding can be enjoyed, and rafting along Shiribetsu River (尻別川) can be enjoyed in a summer. It is one of the features that the Niseko has various nature such as the Mt. Yotei, Shinsen-numa Swamp (神仙沼) and Oyunuma Pond (大湯沼). In addition, tasty water from the Mt. Yotei and tasty ingredients are abundant. I heard from my older sister that vegetables were particularly tasty, so I visited here around 11:30, just opening hour, on a weekday. I did not make a reservation, and was lucky, and was able to enter the restraunt by chance. I asked a waiter, he replied me "The restaurant always is fulled with subscribers or tour visitors". I was really lucky. All dishes are course dishes. Menu has 3 courses, JPY 3,300 course, JPY 5,500 course and JPY 7,700 course. I ordered the JPY 5,500 course, and also ordered a beer-like beverage separately. Because I did not understand table manners, so I would be tense.
As for the French cuisine, a turn of a dish is decided. It is called Russian style to be served one by one dish on a table. Because the dish got cold in cold Russia, it seemed to become so. I think that it is a suitable style for cold Hokkaido.
The appetizer was vegetable salad with meat and fish. I enjoyed a texture of various ingredients with beautiful color. Breads were served, too.
The seasonal vegetable was a roasted Chinese cabbage. Probably it was a simple dish that the Chinese cabbage seasoned with only salt was roasted with an oven. This was outstandingly tasty. I was surprised at the taste of the Chinese cabbage.
The soup was pumpkin soup. The taste was mild, slightly sweet and contained croutons.
The appetizers were uncured ham and persimmons, and were served on a triangular dish. I ate the uncured ham and the persimmon separately. Like an uncured ham melon, I regret that I should have eaten the ham and the persimmon together.
As for the main dish, customers can choose fish or meat. I chose the meat. It was a roasted lamb wrapped with Chinese cabbage. Both the vegetables and the lamb were tender and tasty.
The first dessert was jelly with ginger and pears. Carbonic acid of the ginger ale had fizzy feeling and an interesting texture.
The second dessert was apple tart. They seemed to roast the dozens apple piled with an oven. It was the tart using 100% apples.
Drink and Confectionery
Finally the drink and the confectioneries were served. As for the drink, customers can choose coffee or tea. I chose the coffee. Because I ate stylish confectioneries, I felt as if I was like Marie Antoinette.
I asked the waiter, and He replied me "We aim at 4 goals, and those are that visitors can enjoy appearance of the dish, a fragrance of the dish, a taste of the dish, and visitors are full". His waiting on customers and conversation were great, and I felt comfortable. Meanwhile, last one dish was served. When I left the restaurant, it was around 13:00. Time passed early so as not to think that I stayed for one hour 30 minutes.
