They Garnered One Star in MICHELIN GUIDE Hokkaido 2012 Special Edition and Serve Tasty Vegetables French Cuisine -ASPERGES in Biei-

Restaurant ASPERGES (レストラン・アスペルジュ) is a French restaurant in Biei town located in the southern part of Asahikawa city. ASPERGES means asparagus in French language. It opened a business in 2007 and is open as a restaurant of Biei-senka (美瑛選果) run by JA Biei (JA美瑛). Mr. Kazunori Kato (加藤千典) act as a chef and it is popular restraunt that visitors can enjoy charm of vegetables. They garnered one star in MICHELIN GUIDE Hokkaido 2012 Special Edition.

By the way, Maccarina (they garnered one star in MICHELIN GUIDE Hokkaido 2012 Special Edition) in Makkari village and Moliere (they garnered three stars in MICHELIN GUIDE Hokkaido 2012 Special Edition) in Sapporo are sister restraunts. A building is stylish, too, and the visitors can observe a cooking through glass. This building was designed by Osamu Suzuki atelier. There are many tables and family customrs seem to enjoy.

We visited here to have a lunch on weekdays. Because I wanted Mr. O, my friend who visited Hokkaido for the first time, to eat tasty vegetables of Hokkaido, I took him to ASPERGES. I reserved this restraunt this time and visited here, but reservations were almost full, too. Because the visitors without the reservation could not enter the restraunt, a reservation may be made beforehand. Lunch courses had 3 kinds, JPY 2,600 course, JPY 3,600 course and JPY 4,600 course, and we chose each JPY 2,600 courses.

As for the French cuisine, a turn of a dish is decided. It is called Russian style to be served one by one dish on a table. Because the dish got cold in cold Russia, it seemed to become so. I think that it is a suitable style for cold Hokkaido. In addition, I ordered a non-alcoholic beer because drink could be ordered, too. The price is JPY 600.

Carrot Mousse

The carrot mousse which stuck in various beans fulled of container was served. A shape looked like a soft serve ice cream, and a sweetness of the carrot was tasty. A crispy cone resembled a spring roll.

Assortment of "Biei-no-Hatake" 20 Vegetables and Biei "Nanatsuboshi"

It is salad dished up vegetables produced in Biei. The vegetables were really tasty. Appetizing color was good, too. There were different seasonings around vegetables and we could enjoy a changing taste when we put vegetables to seasonings and ate it. In addition, a potato bread was served in the same timing, too.

Potato Puree

The potato puree is a paste potato dish covered with a bubble of egg white. A butter and milk seemed to be used and were very creamy taste. Wasabi was covered under the potato puree.

Homemade Jambon of Biei Pig Leg

Jambon means a uncured ham of the pig leg in French language. Uncured hams, sauce, caviars, marinade of Chinese cabbage were dished up on a plate. That was tasty when I mixed the biei pig leg, sauce and caviars and ate. In addition, stewed onions were served after having finished eating the jambon. The onion was stewed without probably using all seasonings and we could feel vegetables original taste.

Cremet D'anjou Topped with Haskap Sauce

The Cremet D'anjou is a cake born in Anjou district, French. It was made from a cream cheese and the outside was fluffy. Cremet D'anjou went well with sweet-and-sour haskap sauce.

Black Beans Chocolate

Finally black beans chocolate and a drink were served. As for the drink, the customers can choose among a coffee, a tea and a herb tea. As for this black beans chocolate, half dried black beans were covered with cacao powder. A unique texture and moderate bitterness were good.
